The challenge in this process was the precision timing and controls, and in maintaining uniform cooling rate of hot candy from drop process to packaging. The design needed to cool and completely dry the ingredients to ensure that the packaged candy would maintain its freshness without losing its flavor or risking any residual moisture being trapped in the packaged product. 

We designed the system using a 180-ton screw chiller, pumps, air handlers &  refrigerated conveyor system. To ensure uniform cooling, we utilized a chilled water cooling tunnel and controls for precisely regulating this process. The design incorporated air handlers with deep design chilled water coils for extra moisture removal. 

The cooling process occurs in two stages. Candy Cooling - Drying

  • Drying of base level ingredients

  • Continued drying while reducing the temperature

The process encounters dry powder environment posing an explosion hazard, therefore, we also provided for explosion-proof rooms to contain the risk to the rest of the plant.

All systems were designed for independent operation with their own pumping systems off the main chiller ensuring 100 percent reliability for continued operation should any component fail. Our customer was able to increase production on their product and add an additional product line utilizing the new ingredient mixing rooms increasing overall productivity of the plant.
